Crockpot Cauliflower Loaded Baked Potato Soup

We all love comfort food, but comfort food doesn’t always love us. Fear not, I have an answer for your comfort food desires. This easy and delicious crockpot soup will hit the spot!

Ingredients:

-1 yellow onion

-1 green bell pepper

-2 cups chicken bone broth

-1 12oz bag frozen cubed hash browns

-1 head of cauliflower, riced

-2 lbs turkey breakfast sausage

-4oz fat free cream cheese or greek cream cheese

-cayenne pepper, to taste

-garnishes of your liking, *see notes

-water to thin if need

Instructions:

-cook turkey breakfast sausage on stove. Breaking apart until thoroughly cooked through. Drain juices if needed.

-while turkey cooks dice yellow onion, bell pepper, and pulse cauliflower in food processor

-put all ingredients in crockpot except water and garnishes, cook on high 5 hours, longer for a smoother consistency. Stir occasionally.

-use water to thin if soup gets too thick for your liking

Notes:

Although this soup is good all on its own I love that the garnishes give it a special touch.  I cook up some bacon in the oven on a sheet pan, oh the smells! (375 degrees for 15 mins.) I use fat free greek yogurt in place of sour cream, yum! Green onions are delish, and possibly some jalapeño if you’re feeling spicy! Oh, and cheese, fat free or 2% to keep the trend! Enjoy! 😉
