Egg Roll in a Bowl

Ummmm…who doesn’t like egg rolls??? Try this recipe next time you have a craving! But if you’re ever at Laos New Year…the real egg roll is worth the cheat meal for the day. We borrowed this recipe from Fit Paleo Mom.

Ingredients:

  • 1 tsp coconut oil
  • 1 onion chopped
  • 1 lb ground pork or beef
  • 5 minced garlic cloves
  • 1/3 cup coconut aminos
  • 1 tsp minced ginger
  • 1 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 10 oz bag of coleslaw mix

Directions:

1. Melt coconut oil in large skillet and cook onion, garlic, and meat.

2. In a small bowl combine coconut aminos, ginger, vinegar, and sesame oil

3. Once meat is browned, add coleslaw mix and sauce. Stir to mix well. Reduce heat and cover and let cook for 15 minutes.
